A hearty, slow-simmered stew with tender beef chunks, potatoes, carrots, and a rich savoury gravy.

Ingredients

Serves:6
  • 700 g beef chuck (cubed)
  • 3 medium potatoes (cubed)
  • 3 medium carrots (sliced)
  • 1 large onion (diced)
  • 2 stalks celery stalks (sliced)
  • 3 cloves garlic cloves (minced)
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 leaf bay leaf
  • 1.5 tsp salt
  • 0.5 tsp black pepper

Steps

  1. 1Pat beef cubes dry and season with salt, pepper, and flour.
  2. 2Heat olive oil in a large Dutch oven over medium-high heat. Brown beef in batches (3-4 min per batch). Remove and set aside.
  3. 3Sauté onion, celery, and garlic in the same pot until softened (3 min).
  4. 4Stir in tomato paste and cook 1 minute.
  5. 5Add beef broth, Worcestershire sauce, thyme, and bay leaf. Return beef to pot.
  6. 6Bring to a boil, then reduce to low. Cover and simmer 1 hour.
  7. 7Add potatoes and carrots. Continue simmering 30-40 min until vegetables are tender.
  8. 8Discard bay leaf. Adjust seasoning and serve.
