The slow-cooked Bologna meat ragù — beef, pork, wine, and milk simmered for hours into the most satisfying pasta sauce in Italian cooking.

- 250 g ground beef
- 150 g ground pork
- 1 piece onion
- 1 piece carrot
- 1 piece celery stalk
- 2 pieces garlic cloves
- 400 g canned chopped tomatoes
- 120 ml whole milk
- 120 ml dry white wine
- 2 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 piece bay leaf
- 1 pinch nutmeg
Steps
- 1Finely dice onion, carrot, and celery (soffritto). Mince garlic.
- 2Warm oil in a large heavy pan over medium heat. Cook soffritto for 8 minutes until soft and golden.
- 3Add minced meat and cook, breaking it up, until no pink remains.
- 4Pour in the wine and cook until fully evaporated.
- 5Add tomatoes, milk, bay leaf, nutmeg, salt, and pepper. Stir and simmer on very low heat for at least 2 hours (ideally 3), stirring occasionally. Add a splash of water if it dries out.
