The bold, creamy anchovy dressing that made a salad world-famous — garlic, lemon, Worcestershire, and Parmesan in one powerful flavour punch.

Ingredients

Serves:8
  • 120 ml mayonnaise
  • 30 g Parmesan cheese
  • 2 tbsp fresh lemon juice
  • 2 pieces garlic cloves
  • 3 pieces anchovy fillets in oil
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 0.5 tsp black pepper
  • 0.25 tsp salt

Steps

  1. 1Mince the garlic as finely as possible or grate it into a paste.
  2. 2Finely chop the anchovy fillets and mash into a paste with the flat of your knife.
  3. 3Whisk together garlic paste, anchovy paste, Dijon mustard, Worcestershire sauce, and lemon juice.
  4. 4Whisk in the mayonnaise until smooth and creamy.
  5. 5Fold in the finely grated Parmesan, season with salt and black pepper. Thin with a teaspoon of water if needed.
