A velvety sharp cheddar sauce built on a simple roux — the essential companion for nachos, broccoli, mac and cheese, and loaded fries.

- 30 g unsalted butter
- 30 g plain flour
- 350 ml whole milk
- 150 g sharp cheddar cheese
- 0.5 tsp mustard powder
- 0.25 tsp garlic powder
- 0.5 tsp salt
- 0.25 tsp white pepper
- 1 pinch cayenne pepper
Steps
- 1Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1–2 minutes.
- 2Gradually whisk in the milk until smooth. Cook, stirring, until the sauce thickens, about 5 minutes.
- 3Remove from heat and stir in the grated cheddar until fully melted and smooth.
- 4Season with mustard powder, garlic powder, salt, white pepper, and cayenne.
- 5Serve immediately — the sauce thickens as it cools. Add a splash of milk to loosen if needed.
