Creamy parmesan Alfredo sauce over fettuccine with pan-seared chicken. Rich, indulgent, and quick to prepare.

Ingredients

Serves:4
  • 400 g fettuccine
  • 2 pieces chicken breasts
  • 1.5 cups heavy cream
  • 1 cup parmesan (grated)
  • 3 tbsp butter
  • 3 cloves garlic cloves (minced)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley (chopped)

Steps

  1. 1Cook fettuccine in salted boiling water until al dente. Reserve 0.5 cup pasta water; drain.
  2. 2Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken 5-6 min per side until golden and cooked through. Slice and set aside.
  3. 3In the same skillet, melt butter over medium heat. Sauté garlic 30 seconds.
  4. 4Pour in heavy cream and bring to a gentle simmer.
  5. 5Stir in parmesan until melted and smooth. Season with salt and pepper.
  6. 6Toss fettuccine in the sauce, adding pasta water if needed for consistency.
  7. 7Top with sliced chicken and garnish with parsley.
