Dairy-Free Banana Bread

Moist and tender banana bread made with almond milk and coconut oil. A classic recipe that happens to be completely dairy-free.

Ingredients

  • 3 large overripe bananas
  • 1/4 cup almond milk
  • 1/3 cup coconut oil, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup brown sugar
  • 1 tsp cinnamon

Steps

  1. 1Preheat oven to 175C and grease a 23x13 cm loaf pan.
  2. 2Mash bananas thoroughly in a large bowl. Mix in almond milk, melted coconut oil, eggs, and vanilla extract.
  3. 3In a separate bowl, whisk together flour, baking soda, salt, brown sugar, and cinnamon.
  4. 4Add the dry ingredients to the banana mixture and stir until just combined.
  5. 5Pour batter into the prepared pan. Bake for 55 to 65 minutes until a toothpick inserted in the centre comes out clean.
  6. 6Cool in the pan for 10 minutes, then transfer to a wire rack.
