Soft and chewy chocolate chip cookies made with coconut oil instead of butter. Completely dairy-free and so good you will never miss the original.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup coconut oil, melted
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1.5 cups dairy-free chocolate chips

Steps

  1. 1Preheat the oven to 175C and line two baking sheets with parchment paper.
  2. 2Whisk together flour, baking soda, and salt in a bowl.
  3. 3Beat melted coconut oil with both sugars until combined. Add eggs and vanilla extract and mix well.
  4. 4Fold the flour mixture into the wet ingredients until just combined, then fold in the chocolate chips.
  5. 5Scoop tablespoon-sized balls onto prepared baking sheets, spacing 5 cm apart.
  6. 6Bake for 10 to 12 minutes until the edges are golden. Cool on the sheet for 5 minutes before transferring.
