The classic Greek cucumber dip made dairy-free using coconut yogurt. Just as cool and refreshing, with cucumber, garlic, and dill.

- 400 ml plain coconut yogurt
- 1 medium cucumber
- 2 garlic cloves, minced
- 3 tbsp fresh dill, chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 3/4 tsp salt
- 1/4 tsp black pepper

- 1Grate the cucumber and squeeze out as much water as possible using a clean cloth or paper towels.
- 2Combine coconut yogurt, grated cucumber, minced garlic, dill, lemon juice, and olive oil in a bowl.
- 3Mix well and season with salt and pepper.
- 4Cover and refrigerate for at least 1 hour to let the flavours meld.
- 5Serve drizzled with olive oil as a dip with pita, crudites, or alongside grilled meats.
