A moist carrot cake with cream cheese frosting and walnuts – a modern Easter classic beloved by all generations.

Ingredients

Serves:10
  • 250 g flour
  • 200 g sugar
  • 200 ml vegetable oil
  • 3 pcs eggs
  • 300 g grated carrots
  • 100 g walnuts
  • 1 sachet baking powder
  • 1 tsp cinnamon
  • 200 g cream cheese
  • 150 g icing sugar

Steps

  1. 1Whisk eggs with sugar and oil.
  2. 2Stir in carrots, walnuts, flour, baking powder and cinnamon.
  3. 3Pour into a greased tin; bake at 175°C for 35–40 minutes.
  4. 4Cool completely.
  5. 5Beat cream cheese with icing sugar for the frosting.
  6. 6Spread over the cooled cake and serve.
