A slowly baked lamb and sauerkraut layered casserole with rice and spiced sausage – an old Bulgarian Easter dish of extraordinary depth.

Ingredients

Serves:6
  • 700 g lamb
  • 500 g sauerkraut
  • 200 g sausage
  • 2 pcs onion
  • 100 g rice
  • 1 tsp paprika
  • 40 g butter
  • to taste salt and pepper

Steps

  1. 1Brown the lamb in butter.
  2. 2Slice onion and sauage; sauté in butter.
  3. 3Rinse and shred the sauerkraut.
  4. 4Layer sauerkraut, lamb, sausage and rice in a clay pot.
  5. 5Season and sprinkle paprika.
  6. 6Seal with a lid; bake at 160°C for 2.5–3 hours.
  7. 7Serve directly from the pot.
