Lamb Liver Mousse (Easter Spread)

A smooth, buttery lamb liver mousse – a rich and festive Easter starter served on toast with cornichons.

Ingredients

Serves:6
  • 400 g lamb liver
  • 80 g butter
  • 1 pc onion
  • 2 cloves garlic
  • 50 ml white wine
  • 0.5 tsp thyme
  • to taste salt and pepper
  • 1 bunch parsley

Steps

  1. 1Clean and slice the liver.
  2. 2Melt half the butter; sweat onion and garlic 3 minutes.
  3. 3Add liver and coook 5–7 minutes.
  4. 4Deglaze with wine; cook off the alcohol.
  5. 5Blend with remaining butter, thyme and parsley until silky.
  6. 6Season, pack into ramekins and chill 2 hours.
  7. 7Serve with sourdough toast and cornichons.
