A Rhodope Mountain speciality – lamb braised with spring nettles and rice, finished with a yoghurt and egg sauce. Pure seasonal flavour.

- 600 g lamb pieces
- 300 g nettles (blanched)
- 120 g rice
- 2 pcs onion
- 40 g butter
- 300 ml yoghurt
- 2 pcs eggs
- to taste salt and pepper

- 1Brown lamb in butter with onion.
- 2Add chopped blanched nettles and rice.
- 3Cover with water; season and simmer 40 minutes.
- 4Beat eggs with yoghurt, temper with hot broth and stir into the pot.
- 5Cook gently 5 minutes more and serve.
