Slow-roasted bone-in lamb shoulder with herbs and vegetables – reliably tender and deeply golden for a special Easter occasion.

Ingredients

Serves:4
  • 1.5 kg lamb shoulder (bone-in)
  • 6 cloves garlic
  • 2 sprigs rosemary
  • 1 tsp thyme
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 3 pcs carrots and onion
  • to taste salt and pepper

Steps

  1. 1Stud the lamb shoulder with garlic and rosemary.
  2. 2Rub with oil, lemon, thyme, salt and pepper.
  3. 3Place on a bed of carrots and onion.
  4. 4Cover with foil and roast at 150°C for 3 hours.
  5. 5Uncover and roast at 200°C for 25 minutes to crisp.
  6. 6Rest 15 minutes before serving.
