- 1.5 kg lamb shoulder (bone-in)
- 6 cloves garlic
- 2 sprigs rosemary
- 1 tsp thyme
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 3 pcs carrots and onion
- to taste salt and pepper

- 1Stud the lamb shoulder with garlic and rosemary.
- 2Rub with oil, lemon, thyme, salt and pepper.
- 3Place on a bed of carrots and onion.
- 4Cover with foil and roast at 150°C for 3 hours.
- 5Uncover and roast at 200°C for 25 minutes to crisp.
- 6Rest 15 minutes before serving.
