A luxurious pan sauce of sautéed mushrooms, garlic, thyme, and cream — the perfect finishing sauce for pasta, steak, or chicken.

- 300 g cremini or button mushrooms
- 180 ml heavy cream
- 30 g unsalted butter
- 2 pieces garlic cloves
- 1 piece shallot
- 3 sprigs fresh thyme
- 60 ml dry white wine
- 0.5 tsp salt
- 0.5 tsp black pepper
- 20 g Parmesan cheese
Steps
- 1Slice mushrooms evenly. Finely dice shallot and mince garlic.
- 2Melt butter in a wide skillet over high heat. Add mushrooms in a single layer and cook undisturbed for 3–4 minutes until browned. Season and toss.
- 3Reduce heat to medium. Add shallot and garlic and cook 2 minutes.
- 4Pour in white wine and scrape up any browned bits. Simmer until nearly evaporated.
- 5Add cream and thyme. Simmer for 5 minutes until thickened. Stir in Parmesan. Season to taste.
