Soft, creamy scrambled eggs cooked low and slow with butter. Deceptively simple, endlessly satisfying.

Ingredients

  • 6 large eggs
  • 2 tbsp butter
  • 2 tbsp milk or cream
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 1 tbsp fresh chives (chopped)

Steps

  1. 1Crack eggs into a bowl. Add milk, salt, and pepper. Whisk until uniform.
  2. 2Melt butter in a non-stick skillet over medium-low heat.
  3. 3Pour in egg mixture. Let sit 20 seconds until edges begin to set.
  4. 4Gently push eggs from edge to centre with a spatula, forming soft curds.
  5. 5Continue folding every 15-20 seconds. Remove from heat while eggs are still slightly wet — they will finish cooking from residual heat.
  6. 6Serve immediately on toast, garnished with chives.
