Sugar-Free Banana Bread

Moist and naturally sweet banana bread made with almond flour and a whole ripe banana. Ready in 45 minutes and perfect for breakfast or a snack.

Ingredients

Serves:8
  • 150 g almond flour
  • 120 g very ripe banana, mashed
  • 3 eggs
  • 28 g butter, melted
  • 50 g granulated sweetener
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 30 g walnuts, crushed

Steps

  1. 1Preheat oven to 180C/356F. Line a 18x9cm loaf pan with parchment paper.
  2. 2Beat eggs, mashed banana and melted butter together with an electric mixer until smooth.
  3. 3In a separate bowl, mix almond flour, sweetener, cinnamon and baking powder. Add to the egg mixture and blend until combined.
  4. 4Stir in the crushed walnuts, reserving some to sprinkle on top.
  5. 5Pour the batter into the prepared loaf pan and scatter remaining walnuts on top.
  6. 6Bake about 40 minutes. Check at 30 minutes — if the top is already browning, cover loosely with foil.
  7. 7Cool completely in the pan before slicing. The bread is fragile when hot.
