Frozen cheesecake bites dipped in a dark chocolate shell. Make ahead and keep in the fridge — an irresistible bite-sized treat with no added sugar.

- 100 g almond flour (base)
- 30 g butter, melted (base)
- 1 tbsp powdered sweetener (base)
- 300 g cream cheese
- 60 g powdered erythritol
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 100 g dark chocolate 85%+ for coating

- 1Combine almond flour, melted butter and sweetener; press into the base of a silicone mould or mini muffin tin to form small bases.
- 2Beat cream cheese, erythritol, vanilla extract and lemon juice until completely smooth.
- 3Spoon the filling on top of each base. Freeze for 2 to 3 hours until solid.
- 4Melt dark chocolate in a bain marie; let cool slightly.
- 5Dip the frozen cheesecake bites in the melted chocolate and place on a parchment-lined tray.
- 6Refrigerate for 30 minutes until the chocolate shell is set. Keep refrigerated until serving.
