Sugar-Free Cheesecake Bites

Frozen cheesecake bites dipped in a dark chocolate shell. Make ahead and keep in the fridge — an irresistible bite-sized treat with no added sugar.

Ingredients

Serves:16
  • 100 g almond flour (base)
  • 30 g butter, melted (base)
  • 1 tbsp powdered sweetener (base)
  • 300 g cream cheese
  • 60 g powdered erythritol
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 100 g dark chocolate 85%+ for coating

Steps

  1. 1Combine almond flour, melted butter and sweetener; press into the base of a silicone mould or mini muffin tin to form small bases.
  2. 2Beat cream cheese, erythritol, vanilla extract and lemon juice until completely smooth.
  3. 3Spoon the filling on top of each base. Freeze for 2 to 3 hours until solid.
  4. 4Melt dark chocolate in a bain marie; let cool slightly.
  5. 5Dip the frozen cheesecake bites in the melted chocolate and place on a parchment-lined tray.
  6. 6Refrigerate for 30 minutes until the chocolate shell is set. Keep refrigerated until serving.
