Soft flourless cookies sweetened with erythritol and made with just 5 ingredients. Crispy on the outside, chewy in the middle and ready in 15 minutes.

- 250 g crunchy peanut butter (100% peanuts)
- 100 g granulated sweetener
- 1 egg
- 1 pinch sea salt
- 0.5 tsp cinnamon (optional)

- 1Preheat oven to 180C/350F. Line a baking sheet with parchment paper.
- 2Mix all ingredients together in a bowl with a fork until well combined.
- 3Roll into small balls of about 15g each and place on the lined baking sheet.
- 4Wet a fork and press a criss-cross pattern on each cookie.
- 5Bake 8 to 10 minutes until the edges are firm. Cool completely before eating — they firm up as they cool.
