Japan's beloved sweet-savoury glaze — soy, mirin, sake, and sugar reduced to a shiny, thick sauce that transforms any protein or vegetable.

- 80 ml soy sauce
- 80 ml mirin
- 80 ml sake or dry sherry
- 2 tbsp brown sugar
- 1 piece garlic clove
- 5 g fresh ginger
- 1 tsp cornstarch
- 1 tbsp cold water
Steps
- 1Combine soy sauce, mirin, sake, and brown sugar in a small saucepan.
- 2Grate in the garlic and ginger.
- 3Bring to a simmer over medium heat, stirring until the sugar dissolves.
- 4Mix cornstarch with cold water and whisk into the sauce.
- 5Continue simmering for 3–5 minutes until the sauce thickens to a glossy glaze. Remove ginger and garlic if preferred smooth.
