Moist, tender banana bread with a deep caramel sweetness. The riper the bananas, the better the flavour.

- 3 large ripe bananas
- 1.5 cups all-purpose flour
- 0.75 cup sugar
- 0.33 cup butter (melted)
- 1 large egg
- 1 tsp baking soda
- 0.25 tsp salt
- 1 tsp vanilla extract
Steps
- 1Preheat oven to 175 °C (350 °F). Grease a 9x5-inch loaf pan.
- 2Mash bananas in a large bowl until smooth.
- 3Stir in melted butter, sugar, egg, and vanilla.
- 4Add flour, baking soda, and salt. Mix until just combined.
- 5Pour batter into prepared pan.
- 6Bake 55-65 minutes until a toothpick inserted in the centre comes out clean.
- 7Cool in pan for 10 minutes, then transfer to a wire rack.
