- 500 g ground beef
- 400 g kidney beans (canned, drained)
- 400 g canned diced tomatoes
- 1 large onion (diced)
- 1 medium green bell pepper (diced)
- 3 cloves garlic cloves (minced)
- 2 tbsp tomato paste
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 0.25 tsp cayenne pepper
- 2 tbsp olive oil
- 1 cup beef broth
- 1 tsp salt
- 0.5 tsp black pepper
Steps
- 1Heat olive oil in a large pot over medium-high heat.
- 2Cook onion, bell pepper, and garlic until softened (4 min).
- 3Add ground beef and brown, breaking it apart (5-7 min). Drain excess fat.
- 4Stir in chili powder, cumin, paprika, and cayenne. Cook 1 minute until fragrant.
- 5Add diced tomatoes, tomato paste, beef broth, salt, and pepper. Stir well.
- 6Bring to a boil, then reduce to a simmer. Cover and cook 30 minutes.
- 7Add kidney beans and simmer uncovered 15 more minutes until thickened.
- 8Serve with shredded cheese, sour cream, and cornbread.
