Creamy American-style potato salad with hard-boiled eggs, celery, and a tangy mustard-mayo dressing.

Ingredients

  • 1 kg Yukon Gold potatoes
  • 3 hard-boiled eggs
  • 3 celery stalks
  • 0.5 red onion
  • 60 g sweet pickles
  • 150 g mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • to taste salt and pepper

Steps

  1. 1Boil potatoes in salted water until fork-tender, about 15 minutes. Drain and cool.
  2. 2Peel and cube potatoes once cool enough to handle.
  3. 3Dice celery, onion, pickles, and eggs.
  4. 4Whisk together mayonnaise, mustard, and vinegar.
  5. 5Fold vegetables and eggs into the dressing with the potatoes.
  6. 6Season to taste, cover, and refrigerate at least 1 hour before serving.
