Creamy, dreamy ice cream made with full-fat coconut milk. Naturally dairy-free and customisable with your favourite mix-ins.

Ingredients

Serves:6
  • 800 ml (2 cans) full-fat coconut milk
  • 1/2 cup maple syrup
  • 2 tsp vanilla extract
  • 1 pinch pinch of salt

Steps

  1. 1Shake coconut milk cans well, open and pour into a blender.
  2. 2Add maple syrup, vanilla extract, and a pinch of salt. Blend until smooth.
  3. 3Chill the mixture in the refrigerator for at least 2 hours or overnight.
  4. 4Churn in an ice cream maker according to manufacturer instructions, about 20 to 25 minutes.
  5. 5Transfer to a freezer-safe container and freeze for at least 2 hours before serving.
  6. 6Without an ice cream maker: pour the chilled mixture into a shallow pan and freeze, stirring vigorously every 30 minutes for 3 hours.
