Dairy-Free Caesar Salad

A classic Caesar salad with a bold, creamy dressing made entirely without dairy or anchovies. Crispy romaine, crunchy croutons, and punchy flavour.

Ingredients

Serves:4
  • 2 heads romaine lettuce
  • 1/2 cup raw cashews, soaked
  • 3 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 2 garlic cloves
  • 2 tbsp capers
  • 3 tbsp nutritional yeast
  • 3 tbsp olive oil
  • 60 ml water
  • 1 to taste salt and black pepper
  • 2 slices sourdough bread, cubed

Steps

  1. 1Make croutons: toss bread cubes with 1 tbsp olive oil and salt. Spread on a baking sheet and bake at 200C for 10 to 12 minutes until golden. Set aside.
  2. 2Make dressing: blend soaked cashews, lemon juice, Dijon mustard, garlic, capers, nutritional yeast, remaining olive oil, and water until completely smooth. Season generously with salt and pepper.
  3. 3Chop romaine lettuce into bite-sized pieces and dry thoroughly.
  4. 4Toss lettuce with dressing until well coated.
  5. 5Divide onto plates, top with croutons, and finish with a grind of black pepper.
