Silky smooth chocolate mousse made from chilled coconut cream and dark chocolate. Ready in minutes and completely dairy-free.

- 400 ml full-fat coconut cream, chilled overnight
- 150 g dairy-free dark chocolate
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 pinch pinch of salt

- 1Melt dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Cool to room temperature.
- 2Open chilled coconut cream and scoop out the solid white cream into a cold mixing bowl, leaving the liquid behind.
- 3Whip the coconut cream with an electric mixer until light and fluffy, about 2 to 3 minutes.
- 4Fold in the melted chocolate, maple syrup, vanilla, and salt until smooth and uniform.
- 5Spoon into serving glasses and refrigerate for at least 1 hour before serving. Top with shaved chocolate.
