- 1.5 cups oat milk
- 2 eggs
- 2 tbsp coconut oil, melted

- 2In a separate bowl, whisk oat milk, eggs, melted coconut oil, and vanilla extract together.
- 3Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
- 4Heat a non-stick pan over medium heat and lightly grease with coconut oil.
- 5Pour 1/4 cup batter per pancake onto the pan. Cook until bubbles form on the surface, then flip and cook 1 to 2 minutes more.
- 6Serve with maple syrup and fresh fruit.
