Dairy-Free Mashed Potatoes

Incredibly creamy mashed potatoes made without a drop of butter or cream. Roasted garlic and olive oil create a deeply satisfying side dish.

Ingredients

Serves:6
  • 1 kg Yukon Gold potatoes
  • 4 garlic cloves
  • 4 tbsp olive oil
  • 120 ml oat milk, warmed
  • 1.5 tsp salt
  • 1/4 tsp white pepper
  • 2 tbsp fresh chives, chopped

Steps

  1. 1Peel and cube potatoes into 3 cm pieces. Place in a large pot, cover with cold salted water, and bring to a boil.
  2. 2Add garlic cloves to the pot. Cook for 15 to 20 minutes until potatoes are completely tender.
  3. 3Drain well and return potatoes and garlic to the pot. Allow steam to escape for 2 minutes.
  4. 4Mash with a potato masher, then stir in olive oil and warm oat milk until smooth and creamy.
  5. 5Season with salt and white pepper. Transfer to a serving bowl and garnish with chives.
