Quick and versatile egg fried rice packed with vegetables and seasoned with soy sauce and sesame oil.

- 4 cups cooked rice (day-old preferred)
- 3 large eggs
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 cup frozen peas and carrots
- 3 stalks green onions (sliced)
- 2 cloves garlic cloves (minced)
- 2 tbsp vegetable oil
- 0.25 tsp white pepper
Steps
- 1Heat vegetable oil in a wok or large skillet over high heat.
- 2Add peas and carrots; stir-fry 2 minutes.
- 3Push vegetables to the side, add beaten eggs, scramble until set, then break into small pieces.
- 4Add day-old rice, breaking up any clumps. Toss and fry 3-4 min until heated through.
- 5Drizzle soy sauce and sesame oil over rice, tossing continuously.
- 6Add garlic and white pepper; stir-fry 30 seconds.
- 7Garnish with sliced green onions and serve.
