A luscious no-bake cheesecake with a date-nut crust and a silky cashew filling. Entirely dairy-free and perfect for any celebration.

- 12 Medjool dates, pitted
- 1 cup walnuts
- 2 cups raw cashews, soaked overnight
- 1/3 cup coconut cream
- 1/3 cup maple syrup
- 3 tbsp lemon juice
- 1 tsp vanilla extract
- 3 tbsp coconut oil, melted
- 1 pinch pinch of salt

- 1Process dates and walnuts in a food processor until sticky crumbles form. Press firmly into the base of a 20 cm springform pan. Freeze for 15 minutes.
- 2Drain soaked cashews and blend with coconut cream, maple syrup, lemon juice, vanilla, melted coconut oil, and salt until completely smooth.
- 3Pour filling over the crust and smooth the top.
- 4Freeze for at least 4 hours or overnight until firm.
- 5Remove from the freezer 15 minutes before serving. Top with fresh berries or fruit compote.
