Spinach with Eggs

A classic quick-cook spring dish of wilted spinach with scrambled eggs, garlic and butter – a staple for Easter breakfast or light supper.

Ingredients

Serves:3
  • 500 g spinach
  • 4 pcs eggs
  • 2 pcs onion
  • 30 g butter
  • 2 cloves garlic
  • to taste salt and pepper

Steps

  1. 1Melt butter and gently fry the onion 3–4 minutes.
  2. 2Add garlic and chopped spinach.
  3. 3Cook until wilted, about 5 minutes.
  4. 4Beat eggs, pour over spinach.
  5. 5Stir gently until eggs are just set.
  6. 6Season and serve with bread.
