Simple, chewy almond butter cookies with just 6 ingredients. Gluten-free, dairy-free and ready in 15 minutes — a quick low-carb cookie fix.

- 250 g almond butter (100% almonds)
- 80 g granulated erythritol
- 1 egg, large
- 0.5 tsp baking powder
- 0.5 tsp vanilla extract
- 1 pinch salt

- 1Preheat oven to 180C/350F. Line a baking sheet with parchment paper.
- 2Mix all ingredients in a bowl until a thick, uniform dough forms.
- 3Scoop tablespoon-sized balls of dough onto the baking sheet, spacing them 5cm apart.
- 4Flatten each ball slightly with a fork.
- 5Bake 10 to 12 minutes until the edges are set and slightly golden. The cookies will be soft when hot.
- 6Cool on the baking sheet for 10 minutes before moving — they firm up as they cool.
