Simple, chewy almond butter cookies with just 6 ingredients. Gluten-free, dairy-free and ready in 15 minutes — a quick low-carb cookie fix.

Ingredients

  • 250 g almond butter (100% almonds)
  • 80 g granulated erythritol
  • 1 egg, large
  • 0.5 tsp baking powder
  • 0.5 tsp vanilla extract
  • 1 pinch salt

Steps

  1. 1Preheat oven to 180C/350F. Line a baking sheet with parchment paper.
  2. 2Mix all ingredients in a bowl until a thick, uniform dough forms.
  3. 3Scoop tablespoon-sized balls of dough onto the baking sheet, spacing them 5cm apart.
  4. 4Flatten each ball slightly with a fork.
  5. 5Bake 10 to 12 minutes until the edges are set and slightly golden. The cookies will be soft when hot.
  6. 6Cool on the baking sheet for 10 minutes before moving — they firm up as they cool.
