- 2 egg whites, room temperature
- 2 whole eggs, room temperature
- 200 g almond flour
- 30 g butter, melted
- 20 g psyllium husks
- 1.5 tsp baking powder
- 0.5 tsp xanthan gum
- 1 pinch salt
- 120 ml warm water

- 1Preheat oven to 180C/350F. Line a small 18x9cm loaf tin with parchment paper.
- 2Beat the 2 whole eggs and 2 egg whites for 2 minutes until fluffy and doubled in size.
- 3In a separate bowl, stir together almond flour, psyllium husks, baking powder, xanthan gum and salt.
- 4Add the melted butter and warm water to the egg mixture and stir to combine.
- 5Add the dry ingredients and blend until you have a smooth dough. Do not over-mix.
- 6Fill the batter into the lined loaf tin and smooth the top.
- 7Bake for approximately 45 minutes until a skewer inserted comes out clean. Cover the top with foil after 35 minutes if it browns too quickly.
- 8Cool completely before slicing. The bread firms up as it cools.
