Fluffy, sandwich-ready almond flour bread that does not taste eggy. Only 1.4g net carbs per slice — the ultimate keto everyday loaf.

Ingredients

  • 2 egg whites, room temperature
  • 2 whole eggs, room temperature
  • 200 g almond flour
  • 30 g butter, melted
  • 20 g psyllium husks
  • 1.5 tsp baking powder
  • 0.5 tsp xanthan gum
  • 1 pinch salt
  • 120 ml warm water

Steps

  1. 1Preheat oven to 180C/350F. Line a small 18x9cm loaf tin with parchment paper.
  2. 2Beat the 2 whole eggs and 2 egg whites for 2 minutes until fluffy and doubled in size.
  3. 3In a separate bowl, stir together almond flour, psyllium husks, baking powder, xanthan gum and salt.
  4. 4Add the melted butter and warm water to the egg mixture and stir to combine.
  5. 5Add the dry ingredients and blend until you have a smooth dough. Do not over-mix.
  6. 6Fill the batter into the lined loaf tin and smooth the top.
  7. 7Bake for approximately 45 minutes until a skewer inserted comes out clean. Cover the top with foil after 35 minutes if it browns too quickly.
  8. 8Cool completely before slicing. The bread firms up as it cools.
