Soft and chewy keto cookies made with almond flour and sugar-free chocolate chips. Ready in under 20 minutes with just 7 ingredients.

- 100 g almond flour
- 1 egg
- 30 ml heavy cream
- 28 g unsalted butter, very soft
- 36 g granulated erythritol
- 1 tsp vanilla extract
- 50 g sugar-free chocolate chips or dark chocolate 85%+

- 1Preheat oven to 180C/350F. Line a baking sheet with parchment paper.
- 2Combine almond flour, egg, cream, butter, sweetener and vanilla in a bowl. Mix with a fork and let the dough sit for a few minutes.
- 3Fold in the chocolate chips or chopped dark chocolate.
- 4Form into 10 dough balls, place on the lined baking sheet and flatten each to about half a centimetre thick.
- 5Bake for 13 minutes until edges are golden. Cool on the baking sheet for 10 minutes before moving — they firm up as they cool.
