Gooey keto cinnamon rolls with a cream cheese glaze. Made with fathead dough — soft and fluffy on the inside with caramelised cinnamon edges.

Ingredients

Serves:12
  • 350 g shredded mozzarella (dough)
  • 200 g almond flour (dough)
  • 60 g cream cheese (dough)
  • 1 egg (dough)
  • 1 tsp baking powder (dough)
  • 40 g butter, softened (filling)
  • 60 g granulated sweetener (filling)
  • 2 tsp cinnamon (filling)
  • 60 g cream cheese, softened (glaze)
  • 40 g powdered sweetener (glaze)
  • 2 tbsp heavy cream (glaze)
  • 0.5 tsp vanilla extract (glaze)

Steps

  1. 1Preheat oven to 200C/390F. Mix sweetener and cinnamon for the filling; set aside.
  2. 2Melt mozzarella and cream cheese in the microwave (1 minute, stir, then 30 seconds more) until smooth and fully melted.
  3. 3Add almond flour, egg and baking powder to the cheese mixture; quickly knead into a smooth dough while it is still warm.
  4. 4Place the dough between two sheets of parchment paper and roll out into a rectangle of about 30x22cm.
  5. 5Spread softened butter over the dough and sprinkle the cinnamon-sweetener mixture evenly on top.
  6. 6Roll up tightly from the long side; slice into 12 rolls and place cut-side down in a lined baking tin.
  7. 7Bake 18 to 20 minutes until golden brown.
  8. 8Mix all glaze ingredients until smooth and drizzle over the warm rolls before serving.
