Sugar-Free Strawberry Jam

Fruity, thick strawberry jam with no added sugar and no pectin required. Made with strawberries and ground chia seeds for a beautiful spreadable consistency.

Ingredients

Serves:14
  • 400 g strawberries, fresh or frozen
  • 2 tbsp water
  • 1 tsp chia seeds, ground
  • 1 tsp lemon juice (optional)
  • 1 tbsp powdered sweetener (optional)

Steps

  1. 1Chop the strawberries and place in a saucepan with the water.
  2. 2Bring to the boil with the lid on, then turn down to medium heat and cook for 15 minutes. Add the lemon juice if you want to store the jam longer.
  3. 3Mash the strawberries with a potato masher, then continue to cook on low-medium heat for another 30 minutes until reduced by half. Stir regularly; towards the end, stir constantly to prevent burning.
  4. 4Taste and add powdered sweetener if needed.
  5. 5Stir in the ground chia seeds. Cool, pour into a sterilised jar and store in the fridge.
