Creamy sugar-free vanilla ice cream with no ice cream maker required. Made with whipped cream and cream cheese for a rich, scoopable texture.

Ingredients

Serves:6
  • 480 ml heavy cream, cold
  • 60 g cream cheese, full-fat
  • 60 g powdered erythritol
  • 2 tsp vanilla extract
  • 1 pinch salt

Steps

  1. 1Beat the cream cheese and erythritol together until smooth and fluffy.
  2. 2Slowly pour in the cold heavy cream while beating continuously. Beat until soft peaks form.
  3. 3Add vanilla extract and a pinch of salt; beat briefly to combine.
  4. 4Pour into a freezer-safe container, cover and freeze for at least 4 hours.
  5. 5Remove from the freezer 10 minutes before serving to soften slightly, then scoop and serve.
