The classic cold condiment for fish and seafood — creamy mayo, briny capers, pickled gherkins, and fresh herbs combined into a sharp, tangy dip.

- 180 ml mayonnaise
- 3 pieces pickled gherkins
- 1 tbsp capers
- 1 tbsp fresh dill
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 0.25 tsp salt
- 0.25 tsp black pepper
Steps
- 1Finely chop the gherkins and capers. Finely chop the dill.
- 2Combine mayonnaise, chopped gherkins, capers, and dill in a bowl.
- 3Add lemon juice, Dijon mustard, salt, and pepper. Stir to combine.
- 4Taste and adjust — more lemon for acidity, more capers for brininess.
- 5Refrigerate for 30 minutes before serving. Keeps in the fridge for 5 days.
